SPICY INDIAN-STYLE POTATOES

30 minutes

Preparation Method :

  • Boil, steam or microwave potatoes until just tender; drain.
  • Heat oil in pan, add onion, garlic and ginger, cook, stirring, until onion is soft.
  • Add curry powder, seeds and juice, cook, stirring, until fragrant.
  • Add potatoes and water, cook, stirring, until potatoes are heated through.

INGREDIENTS

  • 750 grams new baby potatoes, halved
  • 100 ml Peanut oil
  • 100 grams onion, sliced
  • 2 cloves garlic, crushed
  • 2 teaspoons grated fresh ginger  
  • 1 ½ tablespoons mild curry powder
  • 1 teaspoon white mustard seeds
  • 2 teaspoons lime juice
  • 100 ml water
