Preparation Method :
- Boil, steam or microwave potatoes until just tender; drain.
- Heat oil in pan, add onion, garlic and ginger, cook, stirring, until onion is soft.
- Add curry powder, seeds and juice, cook, stirring, until fragrant.
- Add potatoes and water, cook, stirring, until potatoes are heated through.
INGREDIENTS
- 750 grams new baby potatoes, halved
- 100 ml Peanut oil
- 100 grams onion, sliced
- 2 cloves garlic, crushed
- 2 teaspoons grated fresh ginger
- 1 ½ tablespoons mild curry powder
- 1 teaspoon white mustard seeds
- 2 teaspoons lime juice
- 100 ml water
