SIMPLY SPICED LOTUS ROOT

Cooking Time :
15 minutes

Preparation Method :

  • Place the root in a saucepan, cover with water, bring to a boil.
  • Adjust seasoning, cover and cook until crisp but tender. Drain and leave in the colander.
  • Heat the oil in a large pan. Add the gram flour and roast over at least for 2 minutes, stirring constantly.
  • Add the powdered spices and salt and stir.
  • Add the lotus root and stir-fry gently for another 5 minutes, stir until the pieces are all well coated with the spices.
  • Adjust the seasoning, sprinkle over the chopped coriander and serve.

INGREDIENTS

  • 550 grams lotus root, cleaned, peeled and sliced diagonally into pieces
  • 50 ml Cooking oil
  • 50 grams gram flour
  • 1 teaspoon garam masala
  • ½ teaspoon turmeric
  • 2 tablespoon ground coriander
  • 2 teaspoon ground cumin
  • Dried mango powder, to taste
  • Chilli powder, to taste
  • Salt, to taste
  • Large handful of chopped fresh coriander
