SIMPLY SPICED LOTUS ROOT

Preparation Method :
- Place the root in a saucepan, cover with water, bring to a boil.
- Adjust seasoning, cover and cook until crisp but tender. Drain and leave in the colander.
- Heat the oil in a large pan. Add the gram flour and roast over at least for 2 minutes, stirring constantly.
- Add the powdered spices and salt and stir.
- Add the lotus root and stir-fry gently for another 5 minutes, stir until the pieces are all well coated with the spices.
- Adjust the seasoning, sprinkle over the chopped coriander and serve.
INGREDIENTS
- 550 grams lotus root, cleaned, peeled and sliced diagonally into pieces
- 50 ml Cooking oil
- 50 grams gram flour
- 1 teaspoon garam masala
- ½ teaspoon turmeric
- 2 tablespoon ground coriander
- 2 teaspoon ground cumin
- Dried mango powder, to taste
- Chilli powder, to taste
- Salt, to taste
- Large handful of chopped fresh coriander
