Preparation Method :
- Heat the oil in a saucepan. Add the chillies and panch phoran, reduce the flame and add the seeds add the vegetables, salt and turmeric.
- Stir well to mix, cover, reduce the heat and cook gently, stirring for about 30 minutes and stir in the sugar and serve.
INGREDIENTS
- 150 grams sweet potato, peeled and cut into small cubes
- 100 grams normal aubergines, in small half-moons
- 2 tablespoon Cooking oil
- 100 grams potato, peeled and cut into very small cubes
- 50 grams green beans or mange tout, topped and tailed or de-stringed
- 75 grams carrots, peeled and sliced into thin coins
- 2 dried red chillies, seeds shaken out
- 2 teaspoon panch phoran
- ½ teaspoon turmeric
- Handful of small cauliflower florets
- Salt, to taste
- Sugar to taste
