SIMPLE, LIGHTLY SPICED VEGETABLES

Preparation Method :

  • Heat the oil in a saucepan. Add the chillies and panch phoran, reduce the flame and add the seeds add the vegetables, salt and turmeric.
  • Stir well to mix, cover, reduce the heat and cook gently, stirring for about 30 minutes and stir in the sugar and serve.

INGREDIENTS

  • 150 grams sweet potato, peeled and cut into small cubes
  • 100 grams normal aubergines, in small half-moons
  • 2 tablespoon Cooking oil
  • 100 grams potato, peeled and cut into very small cubes
  • 50 grams green beans or mange tout, topped and tailed or de-stringed
  • 75 grams carrots, peeled and sliced into thin coins
  • 2 dried red chillies, seeds shaken out
  • 2 teaspoon panch phoran
  • ½ teaspoon turmeric
  • Handful of small cauliflower florets
  • Salt, to taste
  • Sugar to taste
