SAMBHAR KOFTA

Preparation Method :

  • For Kofta
  • In a bowl,Add Besan, vegetables, mashed potatoes, green chilies, ginger, mashed rice, cumin seed powder, red chili powder, coriander powder, garam masala and salt to it.  Mix it well.
  • Make small balls out of this mix.
  • Heat oil in a Kadai.
  • Fry all the koftas over a medium flame.
  • Drain and keep aside.
  • For gravy:
  • Cook the dhal in a pressure cooker with water,bottle-gourd and tomatoes.
  • Take it out from the cooker and mash it like a paste.
  • Heat sesame oil in a pan, add chopped onion stir it for 5 minutes.
  • Add ginger, chilli and garlic paste, cardamoms, bay leaves, cinnamon to it. Keep Stiring it.
  • Add turmeric powder, coriander powder, chilli powder, garam masala and paste.
  • Add required water, salt to taste. Cook for 8-10 minutes.
  • Arrange the koftas in a serving dish.
  • Pour gravy over koftas and garnish them with chopped coriander leaves.
  • Serve hot with parantha or rice.

INGREDIENTS

For Kofta

  • 50 grams Carrots, finely chopped and boiled
  • 50 grams French beans, finely chopped and boiled                  
  • 50 grams Cauliflower, finely chopped and boiled                    
  • 1 medium sized Potato, boiled and mashed
  • 3 tablespoon Besan Flour
  • 100 grams Rice boiled, mashed
  • 1 Green chilli, finely chopped
  • 1 inch Ginger, finely chopped
  • 3 tablespoon Coriander leaves, finely chopped
  • Salt to taste
  • ½ teaspoon Coriander powder
  • ½ teaspoon Cumin seed powder
  •  ½ teaspoon Garam masala
  • ½ teaspoon red Chilli powder
  • Sesame Oil for frying

For gravy

  • 300 grams Toor dal
  • 2 inch bottle-gourd
  • 3 medium sized Onions
  • 3 medium sized Tomatoes
  • 1 tablespoon Ginger, garlic, Chili paste                        
  • ½ teaspoon Red chilli powder
  • ½ teaspoon Turmeric power
  • ½ teaspoon Garam masala
  • ½ teaspoon Coriander powder
  • 2 no Cardamoms               
  • 2 Bay leaves
  • A small piece Cinnamon
  • Salt to taste
  • 2 tablespoon Sesame Oil
