QUORN CHUNKY CURRY

Preparation Method :

  • Heat the oil in a large non-stick saucepan, add the ginger-garlic paste and chilli, fry for about 20-30 seconds.
  • Stir in the coriander powder, curry paste, tomato, ground almonds and little water. Cook on a moderate heat for about 3-5 minutes.
  • Add the quorn and stir, bring to the boil. Simmer for about 10-12 minutes. Uncover, add more hot water if needed and then stir in the yogurt.
  • Stir in the remaining spices and fresh coriander, serve hot.

INGREDIENTS

  • 1 tablespoon ground almonds
  • 300 grams quorn chunks
  • 350 ml hot water
  • 2 tablespoon Cooking oil
  • 1 tablespoon ginger- garlic paste
  • 1 teaspoon coriander powder
  • 50 grams Curry Paste  
  • 50 grams tomato, ground
  • 1-2 green chillies, seeded and sliced
  • 2 tablespoon low-fat yogurt, beaten
  • 1 teaspoon dried fenugreek leaves, crumbled
  • ½ teaspoon garam masala
  • 1 teaspoon cumin powder
  • Salt to taste
  • 2 tablespoon chopped fresh coriander leaves
