POTATOES IN TOMATO SAUCE

Preparation Method :

  • Heat the oil in a heavy pan and fry the onions , onion seeds and curry leaves over a medium heat for 1-2 minutes, being careful not to burn the onions.
  • Add the cumin, ground coriander, chili powder, ginger, garlic, turmeric, salt, lemon juice ,fresh coriander and the canned tomatoes in a bowl. Mix together until well blended.
  • Pour this mixture into the pan and stir until mixed thoroughly with the onions.
  • Finally, add the diced potatoes, cover the pan and cook gently for about 5 minutes over a low heat. Check that the potatoes are properly cooked through, and then serve.

INGREDIENTS

  • 2 medium onions, diced
  • 420 grams tomatoes
  • 1 teaspoon ground cumin
  • 1½ teaspoon ground coriander
  • 1 teaspoon chilli powder
  • 1 teaspoon grated fresh root ginger
  • 1 teaspoon crushed garlic
  • 1 tablespoon chopped fresh coriander
  • 2 teaspoon IDHAYAM sesame oil
  • ¼ teaspoon onion seeds
  • 4 curry leaves
  • 1 tablespoon lemon juice
  • ¼ teaspoon ground turmeric
  • 2 medium potatoes, diced 
  • Salt to taste
