POTATOES IN TOMATO SAUCE

Preparation Method :
- Heat the oil in a heavy pan and fry the onions , onion seeds and curry leaves over a medium heat for 1-2 minutes, being careful not to burn the onions.
- Add the cumin, ground coriander, chili powder, ginger, garlic, turmeric, salt, lemon juice ,fresh coriander and the canned tomatoes in a bowl. Mix together until well blended.
- Pour this mixture into the pan and stir until mixed thoroughly with the onions.
- Finally, add the diced potatoes, cover the pan and cook gently for about 5 minutes over a low heat. Check that the potatoes are properly cooked through, and then serve.

- 2 medium onions, diced
- 420 grams tomatoes
- 1 teaspoon ground cumin
- 1½ teaspoon ground coriander
- 1 teaspoon chilli powder
- 1 teaspoon grated fresh root ginger
- 1 teaspoon crushed garlic
- 1 tablespoon chopped fresh coriander
- 2 teaspoon IDHAYAM sesame oil
- ¼ teaspoon onion seeds
- 4 curry leaves
- 1 tablespoon lemon juice
- ¼ teaspoon ground turmeric
- 2 medium potatoes, diced
- Salt to taste
