POTATOES IN RED SAUCE

Preparation Method :
- Boil the potatoes until they are fully cooked but still retain their shape. Drain well.
- Grind the coriander seeds with the cumin seeds and garlic to a coarse paste using a food processor.
- Heat the oil in a wok or frying pan. Fry the paste, tamarind juice, tomato puree, curry leaves, and sugar until the oil separates.
- Add the potatoes and stir to coat them in the spicy tomato mixture. Reduce the heat, cover and simmer for about 5 minutes. Garnish and serve.
INGREDIENTS
- 450 grams small new potatoes
- 100 ml Cooking oil
- 3 tablespoon thick tamarind juice
- 4 tablespoon tomato puree
- 1 teaspoon granulated sugar
- 1½ teaspoon coriander seeds
- 2 teaspoon cumin seeds
- 4 garlic cloves
- 4 curry leaves
- Salt, to taste
- Coriander sprigs, to garnish
