POTATOES IN RED SAUCE

Preparation Method :

  • Boil the potatoes until they are fully cooked but still retain their shape. Drain well.
  • Grind the coriander seeds with the cumin seeds and garlic to a coarse paste using a food processor.
  • Heat the oil in a wok or frying pan. Fry the paste, tamarind juice, tomato puree, curry leaves, and sugar until the oil separates.
  • Add the potatoes and stir to coat them in the spicy tomato mixture. Reduce the heat, cover and simmer for about 5 minutes. Garnish and serve.

INGREDIENTS

  • 450 grams small new potatoes
  • 100 ml Cooking oil
  • 3 tablespoon thick tamarind juice
  • 4 tablespoon tomato puree 
  • 1 teaspoon granulated sugar
  • 1½ teaspoon coriander seeds 
  • 2 teaspoon cumin seeds
  • 4 garlic cloves 
  • 4 curry leaves 
  • Salt, to taste
  • Coriander sprigs, to garnish
