POTATOES IN RED SAUCE
This is a lightly spiced dish, perfect for children or those who like mild curries.

Preparation Method :
- Boil the potatoes until they are fully cooked. Drain well.
- Grind the coriander seeds with the cumin seeds and garlic to a coarse paste using a mortar and pestle or food processor.
- Heat the oil in a karahi, wok, or frying pan. Fry the paste, tamarind juice, tomato puree, curry leaves, salt, and sugar until the oil separates.
- Add the potatoes and stir to coat them in the spicy tomato mixture.
- Reduce the heat, cover the pan, and simmer for about 5 minutes.
- Garnish with coriander and serve.
INGREDIENTS
- 450 grams small new potatoes
- 1 ½ teaspoons coriander seeds
- 1 ½ teaspoons cumin seeds
- 4 garlic cloves
- 100 ml Cooking oil
- 50 ml thick tamarind juice
- 75 ml tomato puree (paste)
- 4 curry leaves
- Salt
- 1 teaspoon granulated sugar
- Coriander (cilantro) sprig, to garnish
