POTATOES IN RED SAUCE

This is a lightly spiced dish, perfect for children or those who like mild curries.
Serves :

Preparation Method :

  • Boil the potatoes until they are fully cooked. Drain well.
  • Grind the coriander seeds with the cumin seeds and garlic to a coarse paste using a mortar and pestle or food processor.
  • Heat the oil in a karahi, wok, or frying pan. Fry the paste, tamarind juice, tomato puree, curry leaves, salt, and sugar until the oil separates.
  • Add the potatoes and stir to coat them in the spicy tomato mixture.
  • Reduce the heat, cover the pan, and simmer for about 5 minutes.
  • Garnish with coriander and serve.

INGREDIENTS

  • 450 grams small new potatoes
  • 1 ½ teaspoons coriander seeds
  • 1 ½ teaspoons cumin seeds
  • 4 garlic cloves
  • 100 ml Cooking oil
  • 50 ml thick tamarind juice
  • 75 ml tomato puree (paste)
  • 4 curry leaves
  • Salt
  • 1 teaspoon granulated sugar
  • Coriander (cilantro) sprig, to garnish
