POTATO CURRY

Preparation Method :
- Heat the oil in a saucepan. Simmer to low flame, add the onion seeds, the fennel seeds and the curry leaves, stir continuously.
- Remove the pan from the heat and add the remaining ingredients, stir well to combine.
- Return the pan to the heat and stir- fry the spicy mixture for a minute.
- Pour the mixture over the cooked potatoes, mix gently without breaking up the potatoes and stir-fry for about 3-5 minutes.
- Transfer the potato curry to serving dishes and serve immediately.
INGREDIENTS
- 3 medium potatoes, washed, peeled, cut into 6 slices, cooked but not mushy and drained
- 100 ml IDHAYAM sesame oil
- 1 teaspoon onion seeds
- ½ teaspoon fennel seeds
- 1 teaspoon ground cumin
- 1 teaspoon amchur
- 1 teaspoon ground coriander
- ¼ teaspoon turmeric
- Salt and chilli powder, to taste
- Few curry leaves
