POTATO AND CAULIFLOWER CURRY

Preparation Method :
- The oil in a large saucepan.
- Add in the white cumin seeds and dried red chillies.
- Add the sliced onions to the pan and fry, until golden brown.
- Add in the spice mixture and stir-fry for about 2-3 minutes.
- Add the sliced potatoes and the cauliflower florets to the onion mixture, stir until the vegetables coat well in the spice mixture.
- Simmer to low flame and add the green chillies, fresh coriander leaves and water to the pan.
- Cover and cook the mixture for about 15-20 minutes or until done.
- Transfer the potato and cauliflower curry to warm serving plates and serve immediately.
INGREDIENTS
- 250 grams potatoes, peeled and sliced
- ½ cauliflower, cut into small florets
- 50 ml IDHAYAM sesame oil
- ½ teaspoon white cumin seeds
- 3-4 dried red chillies
- 2 onions, sliced
- 2-3 green chillies
- Fresh coriander leaves
- 150 ml water
Spice Mixture
- 1 inch fresh ginger root, finely chopped
- 4-5 fresh garlic cloves, crushed
- Salt and chilli powder, to taste
- A pinch of turmeric
