Preparation Method :
- Heat the oil in a wok or large pan. Add the onion seeds, green chillies and onion, fry for about 3-5 minutes or until the onion turns golden.
- Simmer to low flame and add the turmeric, desiccated coconut and salt. Fry for about a minute, stirring.
- Add the okra pieces to the pan. Turn the heat to medium-high and stir-fry briskly for few minutes or until the okra has turned lightly golden.
- Add the yogurt, tomatoes and fresh coriander. Cook for further 2 more minutes. Transfer to a warmed serving dish and serve hot.
INGREDIENTS
- 500 grams okra, washed, trimmed and cut into small pieces
- 2 tablespoon Cooking oil
- 2 tablespoon natural yogurt
- 3 teaspoon desiccated coconut
- 2 tomatoes, quartered
- ½ teaspoon onion seeds
- 4 fresh red or green chillies, chopped
- 1 onion, sliced
- ¼ teaspoon ground turmeric
- Salt, to taste
- 25 grams chopped fresh coriander
