Preparation Method :
- Heat the oil in a large frying- pan. Add the onions, green chillies and curry leaves. Stir-fry the vegetables for about 3-5 minutes.
- Adjust seasoning with salt and chilli to taste.
- Gradually add the okra, mix in gently. Stir-fry the vegetable mixture for about 10-15 minutes.
- Add in the sliced tomato and sparingly sprinkle over the lemon juice.
- Garnish with coriander leaves, cover and simmer for 3-5 minutes.
- Transfer to serving plates and serve hot.
INGREDIENTS
- 500 grams okra, rinsed, drained, cut to 1 inch pieces and discard the ends
- 150 ml IDHAYAM sesame oil
- 2 onions, sliced
- 3-4 green chillies, finely chopped
- Few curry leaves
- Salt, to taste
- 1 tomato, sliced
- 2 tablespoon lemon juice
- Fresh coriander leaves
