MIXED VEGETABLES IN COCONUT SAUCE

Preparation Method :
- Cook the vegetables in a large pan with the measured hot water and bring to the boil. Cover and cook for about 3-5 minutes.
- Add the coconut milk to the vegetables, adjust seasoning with salt. Simmer to low flame, cover and cook for about 5 minutes.
- In a pan heat the oil over a medium heat and add the curry leaves and the chillies, followed by the cumin, coriander and turmeric. Stir-fry for few seconds and pour over the vegetables.
- Stir well and remove from heat. Serve with Indian bread.
INGREDIENTS
- 1 small cabbage, cut into bite sized pieces
- 250 grams potatoes, cut into small cubes
- 150 grams carrots, scraped and cut into 2 in cubes
- 100 ml coconut milk
- 500 ml hot water
- 150 grams French beans
- 2 tablespoon Cooking oil
- 1½ teaspoon ground coriander
- 2 dried red chillies, chopped into small pieces
- 1 teaspoon ground cumin
- ½ teaspoon ground turmeric
- Salt, to taste
- Few fresh curry leaves
