MIXED VEGETABLES IN COCONUT SAUCE

Preparation Method :

  • Cook the vegetables in a large pan with the measured hot water and bring to the boil. Cover and cook for about 3-5 minutes.
  • Add the coconut milk to the vegetables, adjust seasoning with salt. Simmer to low flame, cover and cook for about 5 minutes.
  • In a pan heat the oil over a medium heat and add the curry leaves and the chillies, followed by the cumin, coriander and turmeric. Stir-fry for few seconds and pour over the vegetables.
  • Stir well and remove from heat. Serve with Indian bread.

INGREDIENTS

  • 1 small cabbage, cut into bite sized pieces
  • 250 grams potatoes, cut into small cubes 
  • 150 grams carrots, scraped and cut into 2 in cubes 
  • 100 ml coconut milk 
  • 500 ml hot water
  • 150 grams French beans 
  • 2 tablespoon Cooking oil
  • 1½ teaspoon ground coriander 
  • 2 dried red chillies, chopped into small pieces 
  • 1 teaspoon ground cumin 
  • ½ teaspoon ground turmeric
  • Salt, to taste 
  • Few fresh curry leaves
