MIXED VEGETABLE BALTI

Preparation Method :
- Heat the oil in a Balti pan, wok or large frying pan over a medium heat. Add the onion and garlic and cook until golden brown.
- Add the chilli powder, coriander and turmeric and cook for 2-3 minutes, stirring all the time.
- Add the vegetables, tomatoes and water. Cover the pan and simmer for 15 minutes, until the vegetables are tender, stirring occasionally.
- If using, add the Balti sauce about 10 minutes before the end of the cooking time.

- 500 grams mixed vegetables, cut into bite-sized pieces
- 50 ml sesame oil
- 2 small onion, finely chopped
- 2 clove garlic, crushed
- 2 teaspoon chilli powder
- 3 teaspoon ground coriander
- 1 teaspoon turmeric
- 4 tomatoes, skinned and chopped
