MIRCHI MASALA

Preparation Method :

  • Boil water. Add tomatoes. Boil for 4-5 minutes. Remove tomatoes from water.
  • Add chillies and boil for 1 minute. Remove from heat. Let chillies be in hot water.
  • When the tomatoes turn cold, puree them in a grinder. Strain the puree. Keep aside.
  • Heat 1 teaspoon butter in a pan. Add potatoes and all other ingredients except lemon juice.
  • Cook on low heat for 5 minutes and prepare a spicy masala. Add lemon juice.
  • Remove chillies from water. Pat dry. Stuff the mirchi with this masala. Do not over stuff.
  • Heat ghee in a pan. Add cumin seeds. Wait till golden. Add pureed tomatoes, salt, garam masala powder, turmeric powder and red chilli powder. Saute for 7-8 minutes till ghee separates.
  • Add malai and stir for 2-3 minutes. If any filling masala is left, add that also to the gravy. Stir for 2-3 minutes.
  • Add water to get a thick gravy. Add stuffed chillies. Check salt.
  • Cover and cook for 10 minutes till chillies get cooked. Turn in between. Serve hot.

 

INGREDIENTS

  • 12 big green chillies-slit, seeds removed
  • 5 potatoes - boiled and mashed
  • 3 teaspoon butter
  • 1 teaspoon salt or to taste
  • 2 teaspoon chaat masala
  • 1 teaspoon dry mango powder
  • ½ teaspoon garam masala powder
  • 1 teaspoon red chilli powder
  • 3 tablespoon yogurt
  • A pinch of black salt
  • 2 teaspoon lemon juice

GRAVY

  • 5 tomatoes
  • ½ teaspoon garam masala powder
  • 1 teaspoon salt or to taste
  • 3 tablespoon ghee
  • 4 tablespoon fresh malai /cream
  • 2 teaspoon cumin seeds
  • ½ teaspoon red chilli powder
  • ½ teaspoon turmeric powder
