LOTUS STEMS IN AN EXOTIC CURRY

Preparation Method :
- Reheat the pan with little oil, add the fried lotus stems and water, bring to the boil.
- Add all the spices and mix in the yogurt. Cook till the curry thickens and the lotus stems are tender, stirring regularly. Serve hot.
INGREDIENTS
- 800 grams Lotus stems, peeled, cut into 1" pieces, discard the ends, washed, deep fried until half done and drained
- 1½ kg Yogurt, whisked
- 200 ml Cooking oil
- 200 ml Water
- 1-2 Cloves
- 2 Green cardamoms
- 1 teaspoon Fennel powder
- Salt to taste
- ½ teaspoon Cumin powder
- ½ teaspoon Cinnamon powder
- 1 teaspoon Black cardamom powder
