LOTUS STEMS IN AN EXOTIC CURRY

Preparation Method :

  • Reheat the pan with little oil, add the fried lotus stems and water, bring to the boil.
  • Add all the spices and mix in the yogurt. Cook till the curry thickens and the lotus stems are tender, stirring regularly. Serve hot.

INGREDIENTS

  • 800 grams Lotus stems, peeled, cut into 1" pieces, discard the ends, washed, deep fried until half done and drained
  • 1½ kg Yogurt, whisked
  • 200 ml Cooking oil
  • 200 ml Water  
  • 1-2 Cloves  
  • 2 Green cardamoms  
  • 1 teaspoon Fennel powder
  • Salt to taste
  • ½ teaspoon Cumin powder
  • ½ teaspoon Cinnamon powder
  • 1 teaspoon Black cardamom powder
