GREEN PUMPKIN CURRY

Preparation Method :
- Heat the oil in a large frying pan. Add the onions and cumin seeds and fry until a light golden brown colour.
- Add the cubed pumpkin to the pan and stir-fry for about 3-5 minutes over a low heat.
- Mix in the amchur, ginger, garlic, chilli and salt.
- Add the water, cover and cook for 10-15 minutes, stirring occasionally.
- Transfer to serving plates and serve with Gram Flour Bread.
INGREDIENTS
- 500 grams green pumpkin, cubed
- 250 ml water
- 100 ml IDHAYAM sesame oil
- 100 grams onions, sliced
- ½ teaspoon white cumin seeds
- 1 teaspoon amchur
- 1 inch fresh ginger root, finely chopped
- 3-4 fresh garlic cloves, crushed
- Crushed red chilli, to taste
- Salt, to taste
