FRIED POTATOES IN TOMATO GRAVY

Preparation Method :
- Heat the oil in a wok; add the crushed garlic mixture, onions and ginger; saute till golden brown.
- Add the tomato puree with little oil, chilli powder and adjust seasoning with salt; saute till the mixture leaves the sides of the pan.
- Add the fried potatoes and salt; saute again. Add the water, mix well.
- Cook covered, over low heat, for 3-5 minutes or until the gravy is thick enough to coat the potatoes.
- Garnish with green coriander and Serve hot.
INGREDIENTS
- 600 grams Potatoes, small, peeled, fried till golden and tender
- 2 Onions, grated
- 4 tomatoes, boiled, peeled and puree
- 100 ml Water
- 50 ml IDHAYAM sesame oil
- A pinch of Sugar
- 2" Ginger piece, grated
- Red chilli powder and salt, to taste
- Green coriander leaves, to garnish
Crush Together
- 4 Garlic cloves
- 1" Cinnamon stick
- 1 Clove
- 5 Green cardamom
