Preparation Method :
- Heat oil in a frying pan; add cinnamon, bay leaves, black and green cardamoms and peppercorns.
- When the spices crackle, add onions and saute till golden.
- Add ginger-garlic paste, mint, chilli powder, turmeric powder, fresh coriander and chillies and saute till oil floats on the surface.
- Add the ladies' fingers, toss well and sprinkle over with garam masala powder.
- Cook for just about 5 minutes, add saffron with water, amchur and salt, bring to a boil and turn off the heat.
- Remove from heat and serve hot.

- 2 small bay leaves
- 1 black cardamom
- 3 green cardamoms
- 4 black peppercorns
- 3 onions, finely chopped
- 2 tablespoons ginger-garlic paste
- 3 tablespoons fresh mint, finely chopped
- 2 teaspoons red chilli powder
- 1 teaspoon turmeric powder
- 1 tablespoon fresh coriander, finely chopped
- 2 teaspoons green chillies
- 800 grams ladies' fingers (okra), trimmed and cut in half
- 2 teaspoons garam masala powder
- A few saffron strands, dissolved in 1 tablespoon warm water
- ½ teaspoon dried mango powder (amchur)
- Salt to taste
