AUBERGINE AND CHICK-PEA DHAL

Preparation Time :
20 minutes

Cooking Time :
30 minutes

Preparation Method :

  • Heat the oil in a frying pan, add the onions and aubergines and fry for 5-10 minutes or until softened.
  • Add the spices and continue to cook about a minute or two.
  • Add the remaining ingredients to the pan, bring to the boil, cover and cook on low flame for about 5 minutes and then stir in the coriander. Serve with pitta bread.

INGREDIENTS

  • 450 grams chick-peas, drained and rinsed
  • 2 teaspoons Cooking oil
  • 2 onions, chopped
  • 250 grams aubergines, chopped
  • 2 teaspoon chili powder
  • ½ teaspoon turmeric
  • 450 grams chopped tomatoes
  • 2 teaspoon cumin seeds
  • 2 tablespoons chopped fresh coriander
  • 4 medium pitta bread, warmed, to serve
