COURGETTES WITH MUSHROOMS IN A YOGURT SAUCE

Preparation Method :
- Heat the oil in a heavy pan and fry the onion until golden brown.
- Then add the ground coriander, cumin, salt and chilli powder and stir together well, until the spices blend with the onion.
- Add the mushrooms and courgettes and stir-fry gently until soft. Just add little water, If the mixture is too dry. Stir in the yogurt and mix it well into the vegetables.
- Sprinkle with chopped fresh coriander and serve immediately.
INGREDIENTS
- 250 grams mushrooms, sliced
- 2 courgettes sliced
- 1 medium onion, roughly chopped
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- 1 teaspoon chilli powder
- 1 tablespoon Cooking oil
- 3 tablespoon natural (plain) low fat yogurt
- 1 tablespoon chopped fresh coriander
- Salt to taste
