COURGETTES WITH MUSHROOMS IN A YOGURT SAUCE

Cooking Time :
25 minutes

Preparation Method :

  • Heat the oil in a heavy pan and fry the onion until golden brown.
  • Then add the ground coriander, cumin, salt and chilli powder and stir together well, until the spices blend with the onion.
  • Add the mushrooms and courgettes and stir-fry gently until soft. Just add little water, If the mixture is too dry. Stir in the yogurt and mix it well into the vegetables.
  • Sprinkle with chopped fresh coriander and serve immediately.

INGREDIENTS

  • 250 grams mushrooms, sliced
  • 2 courgettes sliced 
  • 1 medium onion, roughly chopped
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin 
  • 1 teaspoon chilli powder
  • 1 tablespoon Cooking oil
  • 3 tablespoon natural (plain) low fat yogurt
  • 1 tablespoon chopped fresh coriander
  • Salt to taste
