The slightly tart flavour of yogurt makes a creamy sauce, which is delicious with cooked mushrooms and courgettes.

Preparation Method :
- Heat the oil in a heavy pan and fry the onion until golden brown.
- Lower the heat to medium, add the ground coriander, cumin, salt, and chilli powder. Stir together well.
- Once the onion and the spices are well blended, add the mushrooms and courgettes, and stir-fry gently for about 5 minutes until soft.
- If the mixture is too dry, add just a little water to loosen.
- Finally, add the yogurt and mix it well into the vegetables.
- Sprinkle with chopped fresh coriander and serve immediately.
INGREDIENTS
- 1 tablespoon Cooking oil
- 1 medium onion, roughly chopped
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- 1 teaspoon salt
- ½ teaspoon chilli powder
- 250 grams mushrooms, sliced
- 2 courgettes (zucchini), sliced
- 3 tablespoons natural (plain) low-fat yogurt
- 1 tablespoon chopped fresh coriander (cilantro)
