Preparation Method :
- The Kofta: Mix all the ingredients. Divide the mixture into 15-20 even- sized balls.
- Heat the oil in a wok and deep-fry the koftas, a few at a time, until golden brown. Remove with a slotted spoon and drain the excess oil on absorbent kitchen towels. Keep aside.
- The Gravy: Heat the oil in a wok; add the garlic and spinach puree; cook for about 2 minutes.
- Stir in the tomato puree and mix well.
- Add the red chilli powder, turmeric powder, coriander powder, and salt. Cook for about 5 minutes.
- Pour in little water and bring the mixture to the boil. Stir in the koftas.
- Simmer to low flame and cook for about 5 minutes. Stir in the garam masala and cook till the curry has reduced to half. Remove from heat.
- Remove the koftas carefully with a spoon and place them on a serving dish. Pour the curry on top and serve hot with roti.

- 250 grams Potatoes, boiled, mashed
- 500 grams paneer, mashed
- 50 grams Cornflour
- Salt to taste
- ¼ teaspoon White pepper powder
- Cooking oil for frying
The Gravy
- 1 kg Spinach, boiled and puree
- 500 ml Water
- 50 ml Cooking oil
- 100 ml Tomato puree
- ½ teaspoon Red chilli powder
- 1 teaspoon Garlic, chopped
- ¼ teaspoon Turmeric powder
- ½ teaspoon Garam masala
- ½ teaspoon Coriander powder
- Salt to taste
