CORN COB IN RICH ONION SAUCE

Preparation Method :
- Heat the oil in a wok or large pan and fry the corn until golden brown. Remove the corn and set aside.
- Leave 2 tablespoon of oil in the wok and remove the excess oil. Grind the onion, garlic and ginger to a paste in a food processor.
- Transfer the paste to a bowl and mix in the spices chilli powder, curry leaves and sugar.
- Heat the oil gently and fry the onion paste mixture for 8-10 minutes or until all the spices have blended well and the oil separates.
- Cool the mixture and fold in the yogurt, mix to a smooth sauce. Add the corn and cover with the sauce. Reheat gently for about 8 - 10 minutes. Serve hot.
INGREDIENTS
- Cooking oil, for frying
- 200 grams plain yogurt
- 4 corn cobs, thawed if frozen, halved
- 150 grams onion, finely chopped
- 3 cloves garlic, crushed
- 2 inches piece fresh root ginger, crushed
- ½ teaspoon onion seeds
- ½ teaspoon cumin seeds
- 1 teaspoon five-spice powder
- ½ teaspoon ground turmeric
- Few curry leaves
- ½ teaspoon granulated sugar
- Chilli powder, to taste
- Salt, to taste
