COCONUT STEW
Coconut Stew is a simple recipe with the combination of thick and creamy coconut milk with vegetables like boiled potatoes, carrots, beans, cauliflower peas etc. Coconut stew is served during the Onam Sadya meal of the Onam festival and along with the famous Kerala Appams.

Preparation Method :
- Heat the oil in a pan, add the onions and sauté on a medium flame for 2 minutes.
- Add the cardamom, cloves and cinnamon, mix well and sauté on a medium flame for a few seconds.
- Add the coconut milk, red chilli and salt, mix well and cook on a medium flame for 1 minute.
- Add the cornflour-water mixture and mixed vegetables, mix well and cook on a medium flame for 2 to 3 minutes, while stirring continuously.
- Serve hot with appam.
INGREDIENTS
- 200 ml coconut milk
- 50 ml IDHAYAM sesame oil
- 3 onions, finely chopped
- 2 cardamoms
- 2 cloves
- 1 stick cinnamon
- 1 Red chilli
- Salt to taste
- 1 teaspoon corn flour dissolved in 2 tbsp water
- 300 grams boiled mixed vegetables
