CHICK PEA DUMPLINGS IN A YOGURT SAUCE

Preparation Method :

  • make the sauce, beat the yogurt, salt and chilli powder together and set aside.
  • Sift the gram flour into a large mixing bowl, add the other dry ingredients and blend everything together.
  • Pour in the water and stir to make a thick batter.
  • Fill a large mixing bowl with water and set on one side. Heat the oil in a deep frying pan and drop teaspoonfuls of batter into the hot oil.
  • Cook until golden, turn once and then place the dumplings in the bowl of water to make them softer and lighter.
  • When all the dumplings are fried, remove them from the bowl of water, drain as much water as possible from them and drop them into the yogurt.
  • Heat the oil for the baghaar and fry the cumin seeds and dried red chillies for about 40 seconds.
  • To serve, arrange the dumplings and yogurt sauce in a suitable dish and pour over the hot seasoned oil. Garnish with the chopped coriander, and serve at room temperature.

INGREDIENTS

Yogurt Sauce

  • 500 grams natural yogurt
  • 1 teaspoon salt
  • ½ teaspoon chilli powder

Dumplings

  • 200 grams , gram flour
  • 100 grams onion, peeled and finely chopped
  • ½ teaspoon ginger root, diced and crushed
  • ½ teaspoon crushed garlic
  • ½ teaspoon chilli powder
  • 3 green chillies, chopped
  • 2 tablespoons chopped fresh coriander
  • ½ teaspoon salt
  • 1 teaspoon baking powder
  • 500 ml water
  • Cooking oil for deep frying
  • 1 tablespoon chopped fresh coriander to garnish

Baghaar

  • 2 tablespoons Cooking oil
  • ½ teaspoon white cumin seeds
  • 6 dried red chillies
