BALTI MUSHROOMS IN A CREAMY GARLIC SAUCE
Bread or one of the rice side dishes could accompany this simple and delicious Balti recipe from this book.

Preparation Method :
- Cut the button mushrooms in half, or in quarters if large, and set aside.
- Heat the oil in a karahi, wok, or heavy pan, then add the bay leaf, chopped garlic, and chillies, and quickly stir-fry for about 1 minute.
- Add the mushrooms. Stir-fry for another 2 minutes.
- Remove from the heat and stir in the fromage frais or ricotta cheese, followed by the mint, coriander, and salt.
- Return to the heat and stir-fry for 2 - 3 minutes, then transfer to a warmed serving dish and garnish with mint and coriander leaves.
INGREDIENTS
- 350 grams button (white) mushrooms
- 1 tablespoon Cooking oil
- 1 bay leaf
- 3 garlic cloves, roughly chopped
- 2 green chillies, seeded and chopped
- 250 grams low-fat fromage frais or ricotta cheese
- 1 tablespoon chopped fresh mint
- 1 tablespoon chopped fresh coriander (cilantro)
- 1 teaspoon salt
- Fresh mint and coriander leaves, to garnish
