BABY CORN MASALA

Preparation Method :

  • Boil baby corns in water with 1 teaspoon salt for 4 minutes. Strain and keep aside.
  • Soak poppy seeds and melon seeds in hot water for 15 minutes. Drain and grind to a paste with a little water.
  • Heat ghee in a pan. Add cumin, bay leaf, ginger and green chillies. Stir for 2 minutes.
  • Add the prepared paste and stir for a minute.
  • Add tomato puree, grated tomato, coriander powder, salt, red chilli powder, garam masala powder, subzi masala, dry mango powder and turmeric powder. Stir for 4 minutes.
  • Add baby corns and stir for 5 minutes.
  • Add khoya and bhuno for 2 minutes. Add malai and saute till ghee separates.
  • Add water to get a masala gravy. Simmer for 3 minutes.
  • Serve garnished with coriander leaves.

 

INGREDIENTS

  • 200 grams baby corns
  • 100 grams khoya - grated
  • 100 ml tomato puree
  • 4 tomatoes-grated
  • 4 tablespoon coriander powder
  • 1 teaspoon salt or to taste
  • 1 teaspoon red chilli powder
  • ½ teaspoon garam masala powder
  • ½ teaspoon dry mango powder
  • ½ teaspoon turmeric powder
  • 4 tablespoon malai / cream
  • 2 tablespoon finely chopped coriander leaves

Paste

  • 2 tablespoon poppy seeds
  • 2 tablespoon melon seeds

For Baghar

  • 3 tablespoon ghee
  • 1 teaspoon cumin  
  • 1 tablespoon finely chopped ginger
  • 1 tablespoon finely chopped green chillies
  • 1 bay leaf
