AUBERGINE IN CASHEW COCONUT CURRY

Serves :
4

Preparation Time :
15 minutes

Cooking Time :
20 minutes

Preparation Method :

  • Cut Aubergine lengthwise into slices.
  • Grill or roast it with oil by sprinkling some salt on it.
  • Heat Oil In a pan, add cumin seeds.
  • Add Curry Paste and Cook it.
  • Now add Coconut Milk, salt and Lemon Juice.
  • Add aubergine and Garnish with fresh coriander.

INGREDIENTS

  • 3 Long Aubergines
  • 4 tablespoon Cooking oil
  • 1 teaspoon Cumin seeds
  • 1 tablespoon Curry Leaves
  • 200 ml Coconut Milk
  • 1 teaspoon Lemon Juice
  • Salt to taste
  • Fresh Coriander to Garnish

To be ground into curry Paste

  • 50 grams Cashew
  • 1" piece Ginger
  • 2 cloves Garlic
  • 2 green Chillies
  • 2-3 Pepper corn
  • 1 teaspoon Coriander seeds
  • 1 teaspoon Fresh Coriander
  • 1 Onion
