PrintAUBERGINE AND SWEET POTATO STEW WITH COCONUT MILK
Aubergines and sweet potatoes go well together and the coconut milk adds a mellow note.

Preparation Method :
- Trim and the slice baby aubergines in half lengthways. Cut standard aubergines into chunks.
- Heat half the oil in a wide pan or deep, lidded frying pan.
- Add the aubergines and cook uncovered over medium heat, stirring occasionally, until lightly browned on all sides. Remove from the pan and set aside.
- Slice 4 or 5 of the shallots. Cook the whole shallots in the oil remaining in the pan, adding a little more oil if necessary, until lightly browned. Set aside with the aubergines.
- Add the remaining oil to the pan and cook the sliced shallots, fennel seeds, garlic, and ginger over low heat for 5 minutes.
- Pour in the vegetable stock, and then add the lemon grass, chopped coriander stalks and any roots, lime leaves and whole chillies.
- Cover and simmer over low heat for 5 minutes.
- Stir in 30 ml / 2 tablespoons of the curry paste and the sweet potatoes.
- Simmer gently for about 10 minutes, then return the aubergines and browned shallots to the pan and cook for further 5 minutes.
- Stir in the coconut milk and the sugar and season to taste with salt and pepper, stir in the mushrooms, and simmer gently for 5 minutes, or until all the vegetables are cooked and tender.
- Stir in more curry paste and lime juice to taste, followed by the chopped coriander leaves. Adjust the seasoning, if necessary.
- Ladle the vegetables into warmed bowls. Sprinkle basil leaves over the stew and serve with rice.

- 400 grams baby aubergines (eggplants) or 2 standard aubergines
- 4 tablespoons peanut oil
- 250 grams Thai red shallots or other small shallots or pickling onions
- 1 teaspoon fennel seeds, lightly crushed
- 5 garlic cloves, thinly sliced
- 1 ½ tablespoons finely chopped fresh root ginger
- 500 ml vegetable stock
- 2 lemon grass stalks, outer layers discarded, finely chopped or minced (ground)
- 25 grams fresh coriander (cilantro), stalks and leaves chopped separately
- 3 kaffir lime leaves, lightly bruised
- 2 or 3 small fresh red chillies
- 4 tablespoons Thai green curry paste
- 750 grams sweet potatoes, peeled and cut into thick chunks
- 400 ml coconut milk
- 1 teaspoon palm sugar or light muscovado (brown) sugar
- 250 grams mushrooms, thickly sliced
- Juice of 1 lime, to taste
- Salt and ground black pepper
- Boiled rice and 18 fresh Thai basil or ordinary basil leaves, to serve
