VEGETABLE NUT & LENTIL KOFTAS

Preparation Method :

  • Heat 4 tablespoon of ghee or oil in a large saucepan and gently fry the onion, carrots, celery, garlic and chili for 5 minutes, stirring frequently.
  • Add the curry powder or paste and the lentils and cook gently for 1 minute, stirring.
  • Add the stock and tomato puree (paste) and bring to the boil. Reduce the heat, cover and simmer for 20 minutes or until the lentils are tender and all the liquid is absorbed.
  • Remove from the heat and cool slightly. Add the breadcrumbs, nuts, coriander, egg and seasoning to taste.
  • Mix well and leave to cool. Shape into rounds about the size of golf balls (the mixture is quite soft, so use 2 spoons to help shape the rounds, if necessary).
  • Place the balls on a greased baking sheet, drizzle with the remaining oil and sprinkle with a little gram masala, to taste. Cook in the preheated oven for 15-20 minutes or until piping hot and lightly golden.
  • Mean while, make the yogurt dressing.
  • Mix all the ingredients together in a bowl. Serve the koftas hot with the yogurt dressing.

INGREDIENTS

  • 6 tablespoon Cooking oil
  • 1 onion, peeled and finely chopped
  • 2 carrots, peeled and finely chopped
  • 2 celery sticks, trimmed and finely chopped
  • 2 garlic cloves, peeled and crushed
  • 1 fresh green chili, seeded and finely chopped
  • 1½ tablespoon curry powder or paste
  • 250 grams split red lentils
  • 600 ml vegetable stock
  • 2 tablespoon tomato puree(paste)
  • 150 grams fresh whole wheat breadcrumbs
  • 100 grams unsalted cashews, finely chopped
  • 2 tablespoon chopped fresh coriander or parsley
  • 1 egg, beaten
  • Salt and freshly ground black pepper
  • Garam masala, for sprinkling

Yogurt Dressing

  • 250 grams natural yogurt
  • 1-2 tablespoon chopped fresh coriander or parsley
  • 1-2 tablespoon mango chutney, chopped if necessary
