TOMATO, FETA AND AUBERGINE ROLL-UPS

10 minutes

Cooking Time :
5 minutes

Preparation Method :

  • Preheat the grill to high. Brush each side of the aubergine slices with the oil and grill on both sides until browned and softened. Remove from the grill.
  • Place a piece of feta, a sun-dried tomato and a couple of basil leaves on each slice of aubergine. Season and roll up and secure with a cocktail stick.
  • Place the aubergine rolls under the grill for 2 minutes or until the feta begins to melt.

INGREDIENTS

  • 400 grams aubergine, sliced lengthways into 6 slices, discard the ends and side strips
  • 250 grams sun-dried tomatoes, stored in oil, drained
  • 2 teaspoon Cooking oil
  • 50 grams, feta cheese, sliced
  • 10-12 fresh basil leaves
  • Salt and freshly ground black pepper, to taste
