TANDOORI MUSHROOMS (TANDOORI KHUMBI)

Preparation Time :

Preparation Method :

  • Heat the spinach in a saucepan for about a minute or two. Boil off any extra water and squeeze out any excess. Adjust seasoning with salt to taste and set aside.
  • Whisk together the ingredients for the paste. Taste to make sure there is enough salt and chilli. Preheat the barbecue or grill and brush with the vegetable oil.
  • Tightly pack the mushroom cavities with the spinach. Dip them one by one into the paste and coat thickly.
  • Place the filling side down, on the barbecue or the grill and cook for about 2-3 minutes under the grill or on the barbecue, turning over once. Serve hot with lemon wedges.

INGREDIENTS

  • 300 grams, large button mushrooms, rinsed, cooked, drained and stems discarded
  • 100 grams frozen chopped spinach, thawed
  • Salt to taste    
  • 1 tablespoon Cooking oil
  • 1 lemon, cut into wedges, to serve

Paste

  • 250 ml low-fat yogurt, beaten
  • 2 tablespoon gram flour     
  • 2 tablespoon ginger-garlic paste
  • 2 teaspoon garam masala
  • 1 teaspoon Cooking oil
  • ½ teaspoon carom seeds, pounded
  • ¾ teaspoon green cardamom seeds, pounded
  • 1 teaspoon cumin powder     
  • 1 teaspoon dried fenugreek leaves, crumbled
  • A handful of chopped fresh coriander
  • Red chilli powder and salt, to taste
