SPICY ROOT VEGETABLE GRATIN

This tasty snack is easy to prepare and it is suitable for snacking any time of the day.
Serves :

Preparation Method :

  • Peel the potatoes, sweet potatoes, and celeriac and cut into thin, even slices using a sharp knife or the slicing attachment on a food processor.
  • Immediately place the vegetables in a bowl of cold water to prevent them from discolouring.
  • Preheat the oven to 180°C / 350°F / Gas 4.
  • Heat half the butter in a heavy pan; add the curry powder, ground turmeric, and coriander and half the chilli powder.
  • Cook for 2 minutes, then leave to cool slightly. Drain the vegetables, and then pat dry with kitchen paper.
  • Place in a bowl, add the spice mixture and the shallots, and mix well.
  • Arrange the vegetables in a shallow baking dish, seasoning well with salt and pepper between the layers.
  • Mix the cream and milk together, pour the mixture over the vegetables, and then sprinkle the remaining chilli powder on top.
  • Cover the dish with baking parchment and bake for 45 minutes.
  • Remove the baking parchment, dot the vegetables with the remaining butter and bake for further 50 minutes, or until the top is golden brown.
  • Serve the gratin garnished with chopped parsley.

INGREDIENTS

  • 2 large potatoes, total weight about 500 grams
  • 2 sweet potatoes, total weight about 300 grams
  • 200 grams celeriac
  • 1 tablespoon unsalted (sweet) butter
  • 1 teaspoon curry powder
  • 1 teaspoon ground turmeric
  • ½ teaspoon ground coriander
  • 1 teaspoon mild chilli powder
  • 3 shallots, chopped
  • 150 ml single (light) cream
  • 150 ml milk
  • Salt and ground black pepper
  • Chopped fresh flat leaf parsley, to garnish
