Preparation Method :
- Sift the gram flour into a large bowl and add the salt, bicarbonate of soda, ground rice and fennel and cumin seeds.
- Mix together thoroughly, then add the chillies, onions and coriander. Gradually pour in the water and mix until a thick batter is formed and all the other ingredients are thoroughly coated with it.
- Heat oil in a pan. Pour the batter in a pan. Reduce the heat slightly and cook the bhajiyas for 10 minutes, until golden brown and crisp.
- Remove and drain on kitchen paper.
- Serve hot with a tomato or mango chutney.
INGREDIENTS
- 250 grams gram flour
- 2 teaspoon salt
- Small pinch of bicarbonate of soda
- 50 grams ground rice
- 2 teaspoon fennel seeds
- 2 teaspoon cumin seeds
- 4 green chillies, finely chopped
- 4 large onions, sliced
- 30 grams fresh coriander, finely chopped
- Cooking Oil for deep-frying
- Tomato or mango chutney, to serve
