SPICED ONION BREAD

Preparation Method :

Mix the yeast, sugar and water until frothy. Fry the onion and garlic in the butter until the onion is translucent. Dry-fry the seeds for a few minutes then grind to a powder.
Melt the remaining butter. Stir in the seeds, ginger and onion. Add 100 grams / 4 oz flour. Whisk in the yeast liquid. Cover and leave in a warm place for 1 hour.
Add the remaining flour and knead for 15 minutes. Place in an oiled bowl, cover and leave in a warm place for 2 hours until doubled in size. Knock back and form into a loaf shape.
Place on a floured baking sheet and cut a cross in the centre. Leave to rise for 20 minutes.
Bake at 180°C/350°F/gas mark 4 for 50 minutes until the bottom sounds hollow when tapped. Brush with melted butter while still warm.

50 grams fresh yeast
4 teaspoon brown sugar
4 small onions, chopped finely
4 garlic clove, chopped finely
200 grams butter
6 teaspoon cumin seeds
6 teaspoon coriander seeds
4 teaspoon fenugreek seeds
4 teaspoon sesame seeds
5 teaspoon salt
1 teaspoon coarsely ground black pepper
1 teaspoon cayenne
4 teaspoon grated fresh ginger root
500 grams strong white flour melted butter, to glaze
