Preparation Method :
- Heat oil in a pan and add chopped onions and sauté translucent. Remove and drain on absorbent paper.
- Peel the bananas and potatoes and mash well.
- Combine the mashed bananas and potatoes with chopped onions, ginger-garlic paste, chopped coriander, chili powder, gram flour, cardamom powder and sufficient salt in a bowl and mix well.
- Fill this mixture into the cleaned hollow capsicums and stuff well.
- Using a sharp knife cut the capsicums horizontally into 2-inch thick slices
- Heat clarified butter in a frying pan and shallow-fry the stuffed capsicum slices till the capsicum softens and the filling is golden and crisp.
- Remove, drain on absorbent paper and transfer to serving dish.
- Serve hot with Coriander and Mint Chutney and Dahi ki Chutney.
INGREDIENTS
- 6 unripe green bananas, boiled in their skins
- 2 large onions, finely chopped
- 4 potatoes, boiled
- 2 medium capsicums, tops cut off and cleared of seeds and white pith
- 2 tablespoons finely chopped fresh coriander
- 1 ½ tablespoons ginger-garlic paste
- 2 teaspoons red chili powder
- 2 tablespoons gram flour (besan)
- ½ teaspoon green cardamom powder
- Salt to taste
- 200 ml clarified butter (ghee)
- 2 tablespoons IDHAYAM Sesame oil
To serve:
- Coriander and Mint Chutney
- Dahi ki Chutney
