FALAFEL WITH MINTED YOGURT SAUCE

Preparation Method :
- Drain and rinse the chick-peas. Put in a large saucepan of water. Bring to the boil and simmer for 20-30 minutes until soft. Add salt in the last 10 minutes of cooking time.
- Dry-fry the spices in a small, heavy pan until the aroma rises. Then crush in a mortar.
- Drain the chick-peas and puree in a food processor with the spices and remaining ingredients until smooth. Chill the mixture for at least 1 hour.
- Form into flattish cakes, about 4 cm / 1 ½ inches in diameter, pressing the mixture together firmly. Dip in beaten egg yolk and roll in flour. Chill for 15 minutes.
- Pour about 10 cm / 4 inches of oil into a deep pan. Heat to 180°C/350°F or until a cube of bread browns in 30 seconds. Fry the falafel for about 3 minutes until golden brown. Drain on paper towels.
- Stuff into warmed pitta bread pockets with a spoonful of yogurt sauce, sliced onions, shredded lettuce and lemon wedges.

- 2 onions, grated
- 4 garlic cloves, crushed
- 6 tablespoon finely chopped coriander or parsley
- 6 tablespoon lemon juice
- 4 tablespoon flour
- 1 teaspoon baking powder
- Salt and cayenne pepper
- Beaten egg yolk flour for dusting
- Groundnut oil, for frying
- Minted Yogurt Sauce, to serve
