DEEP FRIED, CAULIFLOWER STUFFED SAVOURY PATTIES

Preparation Method :

  • Mix refined flour, ghee and onion seeds together with just enough water, knead to a stiff dough. Keep aside.
  • Deep-fry the cauliflower. Remove the fried cauliflower with a slotted spoon and drain the excess oil on absorbent kitchen towels. Keep aside to cool. Then chop it into small pieces.
  • Heat the ghee and sauté cumin seeds. Add in the cauliflower, mango powder, green chillies, turmeric powder and salt. Mix well and remove from heat.
  • Divide the dough into small, lemon-sized balls. Roll out each ball into a disc.
  • Cut each disc into half, put spoonful of the cauliflower filling in the middle of one half disc.
  • Fold the disc into a triangular shape, enclosing the filling. Pinch the loose edges to seal. Prepare all the patties in the same method.
  • Reheat the oil in the wok and fry the patties over medium heat, till they are golden brown in color. Remove and drain the excess oil. Serve hot.

  • 250 grams Cauliflower, cut into florets
  • 150 grams Refined flour
  • 50 grams Ghee
  • 1 teaspoon Onion seeds  
  • ¼ teaspoon Turmeric powder
  • ½ teaspoon Cumin seeds
  • 1 teaspoon Mango powder  
  • 3-4 Green chillies, finely chopped
  • Cooking oil for frying
  • Salt, to taste
