WATERCRESS AND AVOCADO CANAPES

Preparation Method :
- Cut the bread into 12 rounds, using a plain or fluted biscuit cutter.
- Cut the avocado in half, around the stone. Peel one half, then slice and dip each piece in lemon juice. Place one piece of avocado on each bread round.
- Scoop the remaining avocado into a bowl and wash.
- Mix in the mayonnaise and watercress. Spoon a little of the mixture on to each canape, top with a peeled, halved quail's egg and garnish with a sprig of watercress.

- 2 small ripe avocado
- 2 tablespoon lemon juice
- 4 tablespoon mayonnaise
- 1 bunch watercress, chopped, reserving
- A few sprigs to garnish
- 8 quail's eggs, hard-boiled
