VEGETABLE KEBABS WITH CORIANDER SAUCE

Preparation Method :
- Prepare the vegetables and thread on to 8 skewers.
- Melt the butter with the olive oil, garlic, spices and seasonings.
- Brush the kebabs with the melted butter mixture. Place under a hot grill or over a barbecue. Grill for 15 minutes, turning and basting frequently, until just tender and beginning to blacken around the edges.
- Serve with the coriander sauce.
INGREDIENTS
- 4 corn-on-the-cob, sliced into rounds
- 10 firm cherry tomatoes
- 4 red onions
- 1 inch pieces
- 2 red and 2 yellow pepper, deseeded
- 4 small courgettes, cut into chunks
- 20 small shiitake mushrooms, stems removed
- 100 grams butter
- 5 tablespoon sesame oil
- 2 garlic clove, chopped very finely
- 1 teaspoon cumin seeds, crushed
- 2 teaspoon coriander seeds, crushed
- Pinch of cayenne pepper
- Salt and pepper
- Coriander Sauce, to serve
