VEAL ROLL WITH CHEESE & PROSCIUTTO FILLING

Preparation Method :

  • Cut off any small pieces of fat from the meat. Cover with foil and pound lightly with a meat tenderizer to make a large thin slice.
  • Season with salt and pepper and cover with slices of prosciutto and cheese. Roll the veal up tightly and tie firmly with kitchen string.
  • Heat the oil over medium-low heat in a heavy- bottomed saucepan just large enough to contain the roll. Brown the roll on all sides, about 10 minutes. Season with salt and pepper.
  • Pour in the milk, partially cover the saucepan, and simmer over medium heat until the milk reduces. This will take about 50 minutes. Turn the meat from time to time during cooking.
  • Transfer to a serving dish, slice, and serve hot with the sauce from the pan.

INGREDIENTS

  • 2 large slice veal, cut from the rump
  • Salt and freshly ground black pepper
  • 150 grams prosciutto
  • 200 grams Fontina or mozzarella cheese, sliced
  • 100 ml sesame oil
  • 500 ml milk
