TANDOORI MASALA SPRING LAMB CHOPS

Preparation Method :

  • Rinse the chop and pat dry. Trim off all excess fat.
  • Mix the yogurt, tomato puree, ground coriander, ginger and garlic, chili powder, food coloring, salt, oil and lemon juice in a bowl.
  • Coat the lamb chops with the spicy mixture and leave to marinate for at least 2-3 hours.
  • Preheat the oven to 240°C/475°F/gas 9. Place the marinated chops in an oven proof dish.
  • Cook in the oven for about 15 minutes by basting the chops with oil if needed . Lower the heat and cook for a further 10 minutes.
  • Check that the chops are cooked and serve immediately, garnish with sliced onion, lime wedges and fresh coriander.

INGREDIENTS

  • 6 small lean spring lamb chops
  • 2 tablespoon natural low fat yogurt
  • 1 tablespoon tomato puree
  • 2 teaspoon ground coriander
  • 2 teaspoon crushed fresh root ginger
  • 2 teaspoon crushed garlic
  • 2 teaspoon chili powder
  • Few drops of red food coloring
  • 1 teaspoon salt
  • 2 tablespoons Cooking oil, plus extra for basting
  • 3 tablespoons  lemon juice

For the salad garnish

  • Lettuce leaves
  • Lime wedges
  • 1 small onion, sliced
  • Fresh coriander
