SPICY GRILLED KING PRAWNS

Preparation Method :

  • Preheat the grill to medium. Blend the yogurt, paprika, ginger and salt to taste. Add to the prawns and marinate for half an hour.
  • Heat the oil in a wok or large pan and fry the sliced onions with the fennel seeds and the cinnamon stick over a medium heat until the onions soften and turn golden.
  • Lower the heat and stir in the crushed garlic and chilli powder.
  • Add the chopped yellow and red peppers to the pan and stir-fry gently for 3-5 minutes.
  • Remove the pan from the heat and transfer to a warm serving dish, discard the cinnamon stick. Set the dish aside.
  • Put the marinated prawns in grill pan or flameproof dish and place under the preheated grill to darken their tops with a char grilled effect.
  • Add the prawns to the onion and spice mixture, garnish with fresh coriander. Serve with plain rice.

INGREDIENTS

  • 25 peeled, cooked king prawns, thawed if frozen
  • 3 onions, sliced
  • 1 yellow bell pepper, seeded and roughly chopped 
  • 1 red bell pepper, seeded and roughly chopped
  • 50 ml plain yogurt 
  • 1 teaspoon grated fresh root ginger 
  • 25 ml IDHAYAM sesame oil 
  • ½ teaspoon fennel seeds, crushed
  • 1 teaspoon paprika
  • 1 inch piece cinnamon stick 
  • 1 teaspoon crushed garlic
  • 1½ teaspoon chilli powder
  • Salt, to taste 
  • Fresh coriander leaves, to garnish
