SPICY GRILLED KING PRAWNS

Preparation Method :
- Preheat the grill to medium. Blend the yogurt, paprika, ginger and salt to taste. Add to the prawns and marinate for half an hour.
- Heat the oil in a wok or large pan and fry the sliced onions with the fennel seeds and the cinnamon stick over a medium heat until the onions soften and turn golden.
- Lower the heat and stir in the crushed garlic and chilli powder.
- Add the chopped yellow and red peppers to the pan and stir-fry gently for 3-5 minutes.
- Remove the pan from the heat and transfer to a warm serving dish, discard the cinnamon stick. Set the dish aside.
- Put the marinated prawns in grill pan or flameproof dish and place under the preheated grill to darken their tops with a char grilled effect.
- Add the prawns to the onion and spice mixture, garnish with fresh coriander. Serve with plain rice.

- 25 peeled, cooked king prawns, thawed if frozen
- 3 onions, sliced
- 1 yellow bell pepper, seeded and roughly chopped
- 1 red bell pepper, seeded and roughly chopped
- 50 ml plain yogurt
- 1 teaspoon grated fresh root ginger
- 25 ml IDHAYAM sesame oil
- ½ teaspoon fennel seeds, crushed
- 1 teaspoon paprika
- 1 inch piece cinnamon stick
- 1 teaspoon crushed garlic
- 1½ teaspoon chilli powder
- Salt, to taste
- Fresh coriander leaves, to garnish
