SPICY GRILLED CHICKEN

Preparation Method :

  • Place all the ingredients except chicken, golden raisins and oil in a food processor and process for about a minute or two.
  • Heat the oil in a wok or large pan, pour in the yogurt mixture and cook gently over a low heat for about few minutes.
  • Add the chicken pieces and stir well to blend together. Cook over medium heat for about 15 minutes or until the chicken is cooked.
  • Sprinkle the golden raisins and the coriander over the chicken.

INGREDIENTS

  • 12 - 14 chicken thighs, incised, rinsed and dried.
  • 25 ml IDHAYAM sesame oil 
  • 75 ml lemon juice
  • 1 teaspoon soft light brown sugar 
  • 2 tablespoon clear honey 
  • 3 tablespoon chopped fresh coriander 
  • 2 fresh green chillies, finely chopped 
  • 1 teaspoon grated fresh root ginger
  • 1 teaspoon crushed garlic
  • 1 teaspoon crushed dried red chillies
  • Salt, to taste
  • Saffron Rice, to serve
