Preparation Method :
- Soak the cashewnuts in water for 20 minutes. Drain and put in a food processor.
- Add the cream and egg and process the ingredients to a coarse mixture.
- Add all the remaining ingredients, except the oil and melted butter, and process until smooth. Transfer to a bowl, cover and chill in the refrigerator for 30 minutes.
- Preheat the grill on high for 10 minutes. Brush the grid and 8 metal skewers lightly with oil.
- Divide the chilled mixture into 8 equal-sized portions.
- Carefully mould each portion onto the skewers, patting and stretching it gently into a sausage shape.
- Arrange the kebabs on the prepared grid and cook for 4 minutes.
- Brush with half the melted butter and cook for a further 1 minute. Turnover and cook for 3 minutes. Baste with the remaining melted butter and cook for a further 2 minutes.
- Remove from the heat and leave the kebabs to rest for 5 minutes before sliding them off the skewers with a table knife. Serve with the chutney and a mixed salad.

- 2 teaspoon salt, or to taste
- 3 teaspoon garlic puree
- 3 teaspoon ginger puree
- 3 green chillies, roughly chopped
- 30 grams fresh coriander, roughly chopped
- 2 teaspoon garam masala
- Cooking oil, for brushing
- 50 grams butter, melted
