SAUTÉED TURKEY WITH MARMALADE GLAZE

Preparation Method :
- Heat the oil and butter in a large frying pan over medium heat. Saute the turkey until golden and cooked, 10 minutes. Transfer to a plate and keep warm.
- Add the marmalade, orange juice, and chicken stock to the pan. Season with salt and pepper. Simmer over medium heat until slightly thickened, about 5 minutes.
- Steam the asparagus until just tender, 5 minutes. Arrange the asparagus and turkey on serving plates. Spoon the marmalade glaze over the top and serve hot.

- 50 ml sesame oil
- 5 tablespoons butter
- 10 turkey cutlets
- 200 ml orange marmalade
- 5 tablespoons freshly squeezed orange juice
- 100 ml chicken stock
- Salt and freshly ground black pepper
- 4 bunches asparagus, trimmed
