SALMON AND CORIANDER CANAPES

Preparation Method :

  • Cut the rye bread into 12 triangular pieces, using a sharp knife.
  • Make the lime and coriander mayonnaise. In a small bowl, mix together the mayonnaise, chopped coriander and lime juice in a small bowl. Season with salt and freshly ground black pepper to taste.
  • Top each bread triangle with a slice of egg, a small portion of salmon and a teaspoon of mayonnaise. Garnish with a coriander leaf. Chill until ready to serve.

INGREDIENTS

  • 6 slices dark rye bread
  • 4 eggs, hard-boiled and thinly sliced
  • 150 grams poached salmon
  • Few coriander leaves, to garnish

For the lime and coriander mayonnaise

  • 5 tablespoon mayonnaise
  • 2 teaspoon chopped fresh coriander
  • 2 teaspoon lime juice
  • Salt and ground black pepper
