- Preheat the oven to 400°F (200°C/gas 6). Combine the sage, rosemary, garlic, salt, and pepper in a bowl. Mix well, then use to season the chicken inside and out.
- Prick the lemon thoroughly with a fork and insert into the abdominal cavity of the chicken. Place the chicken in a roasting pan and drizzle with the oil. Bake for 15 minutes, then add the potatoes.
- Turn the chicken and potatoes every 15 minutes, basting with the oil and cooking juices. When cooked, the chicken should be very tender, the meat should come off the bone easily, and the skin should be crisp, about 1 hour.
- Transfer to a heated serving dish and serve hot.
