ROASTED CHICKEN ROLLS WITH CHEESE

Preparation Method :
- Preheat the oven to 400°F (200°C/gas 6). Line a baking sheet with parchment paper. Make a slit lengthwise through each chicken breast to form a pocket. Stuff the cheese and chives inside each pocket.
- Heat the oil in a large frying pan over medium-high heat. Sauté the chicken in batches until golden, about 2 minutes each side.
- Transfer the chicken to the baking sheet. Roast for 6-8 minutes, until just cooked through. Cover and let rest for 5 minutes.
- Heat the butter in the frying pan over medium heat. Sauté the spinach until just wilted, 5 minutes. Season with salt, pepper, and the nutmeg. Slice the chicken and serve hot with the spinach.

- 200 grams Gruyere cheese, thinly sliced
- 3 tablespoons finely chopped fresh chives
- 2 tablespoon sesame oil
- 100 grams butter
- 2 bunch spinach, trimmed
- Salt and freshly ground black pepper
- Pinch ground nutmeg
